The Proper Cocktail

Tropical

Also known as "tiki" or "exotic" drinks.  Tropical-style drinks are mostly single-serving punch-style drinks featuring a base spirit, fruit juice and syrups or liqueurs, often deployed in various combinations. Unlike sours, these drinks are typically served with an abundance of ice.

Singapore Sling

The Singapore sling has been documented as early as 1930 as a recipe in the Savoy Cocktail Book.  developed sometime before 1915 by Ngiam Tong Boon, a Hainanese bartender working at the Long Bar in Raffles Hotel, Singapore. It was initially called the gin sling, - a sling was originally an American drink composed of spirit and water, sweetened and flavored.

1 1/2 ounces gin

1 ounce lime juice

1/4 ounce simple syrup

2 ounces club soda

1/2 ounce cherry brandy, kirsch, or Cherry Heering

Lemon slice for garnish

Maraschino cherry for garnish

Tropical Recipes

 

Bahama Mama

1/4 ounce coffee liqueur

1/2 ounce dark rum

1/2 ounce coconut liqueur

1/4 ounce 151 proof (high proof) rum

Juice of 1/2 lemon

4 ounces pineapple juice

Strawberry or cherry for garnish

 

Hurricane

2 ounces light rum

2 ounces dark rum

2 ounces passion fruit juice

1 ounce orange juice

Juice of a half a lime

1 tablespoon simple syrup

1 tablespoon grenadine

Orange slice and cherry for garnish

 

Mai Tai

1 ounce light rum

1 ounce dark rum

1/2 ounce lime juice

1/2 ounce orange curacao

1/2 ounce orgeat syrup

Maraschino cherry for garnish

 

Pina Colada

2 ounces light rum

2 ounces pineapple juice

1 1/2 ounces cream of coconut

Pineapple wedge for garnish

Maraschino cherry for garnish

 

Planters Punch

1 1/2 ounces dark rum

1/4 ounce grenadine - or 1/2 ounce lime juice and 1/4 ounce simple syrup

2 ounces pineapple, orange, or passionfruit juice (or a mix of fruit juices)

Club soda (optional)

Seasonal fruit for garnish

 

Zombie

1 ounce light rum

1 ounce dark rum

1 ounce 151-proof dark rum (optional)

1 ounce orange curacao liqueur

1/2 ounce lemon juice

1/2 ounce lime juice

1 1/2 ounces orange juice

1 1/2 ounces passion fruit puree (or syrup)

1/4 ounce grenadine

2 dashes Angostura bitters
